How Our Fresh Pasta is Made
First, we begin with high-quality flour, eggs, and olive oil. Then we knead the dough. Depending on
whether we're making gnocchi, fettuccine, or another type of pasta, it's either rolled by hand or pressed through a machine and cut. Then we pair the perfect fillings for our stuffed pasta dishes.
Dry pasta, on the other hand, is made with water and flour and dried. While dry pasta is good for some dishes, handmade pasta really highlights delicate sauces, and it tastes incredibly fresh and delicious. And, a true pasta Bolognese is just not the same without handmade fettuccine!

You can find comfort in our Fettuccine Bolognese—a classic slow-cooked ragu of beef, pork, and lamb, served with homemade fettuccine. Or, indulge in our Pappardelle all’Aragosta, a dish that starts with handmade wide-ribbon pasta that's sautéed with scallop, shrimp, and lobster meat in a creamy pesto sauce—the sauce and pasta combination is pure perfection.
